William Fèvre has always been one of the great advocates of real, authentic Chablis. He even wrote a book about it: Le vrai Chablis et les autres. In the meantime, the house has been in the hands of Joseph Henriot for 20 years, known from the Champagne house and Bouchard père et fils in Beaune.
He makes real "terroir wines" where each plot is made separately, in this case "Champs Royaux". These wines have a great storage potential. When drunk young they can best be decanted. Pure class in the glass. Perfect with a piece of white meat, cream sauces, lobster,...
